Vegetarian Dan Dan Noodles Recipe


These Vegan Dan Dan noodles are spicy, nutty and so addictive. It is so easy and delicious ready within 20 minutes. I love to add homemade chili oil to this Dan Dan Noodles which include a special ingredient, Sichuan peppercorns that create a slightly tingly numbness on the tongue, but if you’re not a fan of spicy food you can skip that. You can also buy chili oil at local Asian Grocery stores but homemade chili oil is the best! I usually make a big batch and keep it on hand in the fridge, it’ll last for 3 weeks. 

 

Prepare time: 10 minutes

Cooking: 20 minutes

Serving: 6

 

Ingredients:

400g Dan Dan noodles or any fresh noodles

1 small batch of Choy Sum or any leafy vegetable 

6 Sunny Egg or hard boiled Egg


Sauce:

1/3 cup Unsweetened Peanut butter

1/3 cup Light soy sauce 

1/4 cup Black vinegar 

4 cloves Garlic, minced

2 tbsp. Green Onion

2 tsp Brown Sugar 

1/2 tsp Sichuan Peppercorn

2 tbsp Chilli Oil

  1. Whisk the unsweetened Peanut butter and light soy sauce together in a bowl until fully incorporated. Add the black vinegar. Continue stirring until mixed. Then mix in the garlic, green onion, brown sugar, and Sichuan peppercorns.

  2. Cook noodles according to package instructions.

  3. Blanch all leafy vegetables, drain and set aside.

  4. For each noodle bowl, add 1/4 cup of noodle sauce, add the chili oil according to your taste. Add some noodles, then top with some green veggies and sunny eggs. Sprinkle with a pinch of toasted ground white sesame or crunchy roasted peanut if you like.

  5. Serve hot or cold.
