Ingredients:
2 Russet potatoes, chopped
1 Carrot, chopped
3 Tomatoes, cut into wedges
4 Red dates
1 Onion, chopped
1 cup Barley
1.5 liter water
500g Pork Ribs (Optional for Vegetarian)
Salt to taste
To prepare:
Blanch pork ribs in a pot of boiling water for 5 minutes, then rinse with cold water and set aside.
In a large soup pot, over high heat, add all ingredients and boil for 10 minutes. Then cover and simmer for 45 minutes under low heat or until barley is tender.
Season well and ready to serve.
