This light and healthy quick meal is a tasty meal for Friday dinner. This refreshing spinach soba noodle bowl takes less than 30 minutes, topped with crispy pan seared salmon fish, crunchy spring onion and umami seaweed. You can try this recipe with chicken breast, shrimps, beef or even tofu for a vegetarian dinner.

Ingredients:
2 Salmon fillet
2 spinach soba noodles
1 tbsp ginger, chopped
2 tbsp spring onion
4 tbsp soy sauce low sodium
2 tbsp mirin
2 tbsp dry seaweed
Salt & pepper to taste
To prepare:
Bring a pot of water to boil and cook spinach noodle accordingly to package
Pat dry salmon fillet, season with salt and pepper. Heat the wok over medium heat with olive oil, sauté ginger until fragrant, set aside. Then pan seared salmon under medium heat until cooked through. Set aside.
Mix together stir fry ginger, light soy sauce and noodles until fully combined.
Serve with salmon and scattered with spring onion and seaweed.
Serve hot or cold immediately.
