
I’m obsessed with these new coconut cheese bread loafs! Cheddar and Parmesan cheese with bits of coconut flake, this savoury cheese loaf bread makes me crazy!
Originally, I intended to make a normal loaf bread as normal. When I started to reshape bread dough I thought, why not add cheese and coconut flakes that’s already available in my fridge and make a braided loaf that is filled with loads of cheese ? It’s definitely a winning combo! Once baked, the crispy coconut flakes beautifully on top and cheese gives the bread a tasty savoury edge. Excellent!

Servings: 2 loaves
Ingredients
750g bread flour or All purpose flour
60g Brown Sugar
12g Salt
9g Instant Yeast
405ml Water or milk
30g Butter or Olive Oil
100g Parmesan Cheese
100g Cheddar Cheese
Fillings
100g Fresh Coconut flakes
4 tbsp Butter
2 tbsp sugar
1 tsp salt
Directions:
In a bread machine, add all ingredients and select the dough setting, stir to combine and wait for 1 hour for rise until double size.
Mix fresh coconut flakes, butter, sugar and salt then set aside.
Turn the dough out onto a clean, lightly floured surface, gently press it all over to remove any air pockets. Divide the dough into 2, working with one piece at a time. Gently pat it into a 9x12 inch rectangular.
Add the Coconut, Parmesan filling and fold it over to become a rectangular shape. Divide and cut into 3 long rolls and braid three pieces of bread together and then pinch together the end pieces and tuck them under the roll. Carefully place the load on the toast box or parchment paper lined baking sheet.
Brush thoroughly with egg mixture and then sprinkle with Parmesan and cheddar cheese.
Let it loaf sit while the oven is preheating to 175•C for about 10 minutes.
Bake for 20 minutes, or until golden brown. Let it cold completely before Slice and enjoy!
