This is a Traditional Malaysia Cuisine consisting of fragrant chicken cooked in coconut milk and spices and is called Chicken Rendang.

Ingredients
1 whole chicken cut into bite-size
1 cup kerisik
1 cup thick coconut milk
30g Gula Melaka/brown coconut sugar
½ cup olive oil
1 tbsp salt
1 galangal (2.5cm)
3 stalks lemongrass
Ingredients A
5 red chillies, de-seed
20 dried chillies, soaked & de-seed
Ingredients B
20 shallots, peeled
5 clove garlic, peeled
5 candlenuts/buah keras
1 ginger (2.5cm)
1 tbsp turmeric powder
3 stalks lemongrass
How?
Add ingredients A & B with some water in a blender. Blend into a coarse paste and set aside.
Heat a wok with olive oil, sauté lemongrass and galangal until fragrant, then add chilli paste and continue to sauté until aromatic around 10 minutes or until the paste has darkened.
Add chicken pieces and mix until fully combined.
Add thick coconut milk, kaffir leaves, coconut sugar and stir occasionally for around 30minutes then Season with salt to taste.
Serve with warm rice immediately.
