This is a light, healthy & vegan traditional Chinese dish
that require only three ingredients: eggs, noodles and tomatoes.
You will need:
2 servings of noodles of your choice (I’m using spinach noodles)
2 tablespoons of vegetable oil
1 tsp garlic minced,
1 tablespoon sesame oil
2 eggs
Salt & pepper to taste
2 cups of water or chicken stock
Steps;
Cook noodles in a pot of boiling water according to the packet instructions. Drain and transfer to a large soup bowl post with a few drops of oil to keep the noodles from sticking to each other.
At the same time, he 2 tablespoons of vegetable oil or in the wok add garlic and tomato and cook for 2 minutes until the tomatoes soften.
Add water or chicken stock, salt to taste and simmer for 3 minutes.
Slowly stir in the two beaten eggs, turn off the heat and pour the soup onto the cooked noodles. Top with chopped scallion or coriander and ready to serve.
