I can eat eggplant & tomato stew every day! It’s easy to make yet satisfying. I always try to cook eggplant because I love seeing the purple colour when preparing it! It is a hearty stew inspired by Chinese dishes. You can make it vegan by skipping this minced pork, and today I’m going to make it as a delicious bento for my lunch. This Spiced Eggplant & Tomato Stew Recipe makes the perfect dish for slow weekday lunch or you could make it ahead of time to enjoy throughout the week. I love it served over rice, but it is also delicious over noodles!
Ingredients
500g minced pork
½ cup onion diced
1 tbsp ginger
1 tbsp garlic
1 tbsp scallion
1 cup water
1 tbsp soy sauce
1 tbsp dark soy sauce
2 tbsp sugar
1tbsp oyster sauce
1 tbsp cooking wine
Steps
Heat up a wok with oil, add onion, scallion, garlic & ginger, sauté until fragrant.
Add minced pork and all ingredients. Simmer for 15 mins or until eggplant is soft.
Garnish with cilantro and serve
