Ingredients 

120g butter

120g sugar 

120g egg 

102g cake flour 

18g cocoa powder 

3.6g baking powder 

40g Gianduja 


Cocoa Nib Crumble 

55g butter 

55g sugar 

55g ground almond 

55g flour T45

30g cocoa nib 

1.5g salt 



Method: 

  1. Preheat the oven to 175C and line the baking tin with baking paper.  

  2. In an electric mixer, place butter and sugar inside at medium speed. 

  3. Meanwhile sift the flour, cocoa powder and baking powder and set aside. 

  4. When butter and sugar start to lighten in colour and gain some volume, gradually add eggs one by one into the batter and then the cake flour. 

  5. Mix all ingredients for cocoa nib crumble together until a smooth dough forms and cut into small pieces. 

  6. Next, fold in the Gianduja by hand and fill the load tins that have been lined with baking paper halfway. Sprinkle over the chocolate cake mix. 

  7. Bake in the oven for approximately 25-30 mins or until the toothpick comes out clean from the center. 

  8. Cool before cutting and serve immediately.
