This is a moist, refreshing and delicious lime cake recipe with simple frosting. The light citrus lime literally blends well to coconut unique flavours. So delicious!
Perfect for a wonderful weekend breakfast or afternoon tea.
Ingredients
2 tsp lime grind
1 cup brown sugar
125g butter, melted
2 eggs
1 cup, 250ml coconut milk
2 tsp poppyseed
Lime Drizzle Icing
1 ½ cups icing/powdered sugar
2 tbsp lime juice
Method
Preheat the oven to 180c, grease and line the base with baking paper.
Combine all ingredients into a large bowl. Whisk butter, eggs and coconut milk in a small bowl. Add to the flour mixture. Stir to combine. Pour into the prepared pan. Smooth the surface.
Bake for 30 mins or until a toothpick inserted in the centre comes out clean. Set aside in the pan for 5 mins. Turn into a wire rack to cool completely.
To make the lime drizzle icing, place the icing sugar in a bowl. Add enough lime juice to form a runny paste. Pour over the top the cooled cake.
