Ingredients
5 eggs
3 tbsp whole milk
1 tbsp butter 1 tbsp chopped ham
2 tbsp grated cheddar cheese
1 tbsp chopped green onion/scallions
½ avocado, sliced
Preparation
In a bowl, whisk the eggs, with milk, salt and pepper.
Heat a wok over medium heat with olive oil, pour the eggs into the wok.
Cook for 2-3 minutes. When the edges are almost cooked and the centre is runny, sprinkle the chopped ham, cheese and green onion.
Fold the other half the omelette onto the garnished half. Cover the lid and continue to cook for 2 minutes or until desired doneness. Add butter from the side until melted.
Serve immediately with sliced avocado on top.
