What’s for Today’s lunch: Ginger Pork Onigirazu - tender thick ginger pork slices and scramble egg wrapped between layers of rice and nori! 😍

If you’re a fan of Ginger and pork chop, I guarantee you’ll love this dish. It’s such an easy and quick dish to make for your busy weekday bento or nights. If you are not a fan of pork chops, you can replace them with beef steak or chicken chop! It tastes good too!

Ginger Pork (Shogayaki) Ingredients 

2 thin slice Pork slice 

1/4 Onion

1 clove garlic 

1-inch ginger, thinly sliced 

1 tbsp sesame oil 

Salt and black pepper to taste 


Seasoning 

2 tbsp soy sauce 

2 tbsp mirin/rice vinegar

2 tbsp sake 

1 tsp sugar 


Direction

  1. Gather all ingredients and marinate overnight. 
  2. Heat up a wok with oil and put the meat in a single layer. Flip the meat when the bottom side is golden brown. 
  3. When the meat is cooked through, add seasoning and cook for 1 minute. Set aside 
  4. Place a plastic wrap on a working surface and put a sheet of nori seaweed on top (shiny side facing down). with a corner pointing up. Evenly spread the steamed rice in a thin layer and form into a square/rectangular shape in the centre of the nori sheet. Sprinkle a little bit of kosher salt or chilli sauce. (Optional)
  5. Place the lettuce on top of the rice and put some Japanese mayonnaise. Then put ginger pork on top. When you add the fillings, consider how you will cut the onigirazu later. You want to arrange fillings so when you slice the onigirazu in half, the ingredients are revealed in a way so it looks delicious.
  6. Bring left and right corners of the nori sheet towards the centre with the plastic. Fold gently but tightly to wrap around the rice and fill at the centre. Then bring bottom and top corners towards the centre. Continue to fold gently but tightly around the layers. 
  7. Slice into half and ready to serve.
