How about spicy and sour Malaysian Sambal Prawn (Shrimp) with Turmeric Rice?
My family said this is going to be their top 10 comfort foods, especially weekday meals.
Ingredients
3 tbsp cooking oil
600g prawn, deveined and deshelled
2 tbsp tamarind juice/pomegranate Molasses
3 kaffir lime leaves, sliced thinly
2 tbsp salt
1 tbsp sugar
¼ cup water
½ cup long bean, chopped
Spice paste
10 dry red chillies, deseeded
10 shallot, peeled
30g belacan/sambal chili paste
2 tbsp water
Steps
Grind the spice paste with a food processor or blender.
Heat up a wok using 2 tbsp cooking oil and stir fry the paste until fragrant
Add prawn and long beans, continue to stir fry for 3-4mins, then add water, tamarind juice and kaffir lime leaves. Season with sugar and salt to taste.
Serve immediately
