
10-min Tomato Egg Drop Noodle ๐ #้ธก่็ช่้ข
This healthy and vegan tomato Egg Drop Noodle is a traditional Chinese dish! I take this almost every day when I travel to China. Only 3 ingredients: Egg, tomato and noodles! The tomato broth is thick and full of umami goodness! I love these egg noodles that suck up all yummy gravy.
Tips: To achieve this pretty red colour, pick ripe & sweet tomatoes
Ingredients (2 pax)
2 serving noodles of your choice
2 tbsp vegetable oil
3 eggs
1 clove garlic, minced
1 scallion, chopped
3 big tomatoes
2 cup water or chicken stock
1 tsp sugar
Salt & pepper to taste
Steps
Cook noodles in boiling water according to package instructions. Drain and set aside
Heat up a wok with vegetable oil, sautรฉ garlic until fragrant then add tomatoes. Cook until softened, around 3-4mins
Add stock, sugar, salt and pepper to taste. Simmer 3 mins
Beat egg in a bowl and slowly stir in the egg and add cooked noodles. Top with chopped scallion. Serve immediately
