Ingredients 

1 whole chicken, blanched 

2 bundles watercress/arugula

3 dehydrated shiitake mushrooms (optional) 

5 dried red dates

2 pieces Mandarin peel (optional)

1 carrot, cubed 

Salt to taste 


Steps: 

Add all ingredients into the pot and simmer for 1-2 hours. Season with salt and ready to serve.
